Pecorino Cheese with Truffled Honey
It took me a while to warm up to the earthiness of Truffles. In fact, it wasn’t until Chef school that I knew truffles to be anything other than a decadently rich chocolate. Little did I know, on family trip to Tuscany, I would develop a great appreciation for these little underground treasures. In the Florence market, I discovered a perfect pairing: Truffle Honey and young Pecorino Cheese. So simple, yet such a delight to the palate! I often serve this as an hors d’oeuvre by slicing thin, bite sized wedges of a young pecorino cheese and adding a drizzle of truffle infused honey – just enough to sit on the wedge of cheese, but not run off the sides. A "wowing" effect and only two ingredients needed!
